Angie...

Hi there and welcome to the world of Kombucha!

Yes...many iof us including myself make a tea concentrate and then add cold

water to hasten the cooling process.

I also have added ice, which is made with the same RO (reverse osmosis)

water I brew with.

Carbonation is a mystery to me...sometimes it happens, sometimes not! It is

still good KT and still good for you!

Happy brewing to you!

Gayle

Hi Angie,

& nbsp;

When I brew the sweet tea I use 1 quart of boiling water, 6 green or black tea

bags and one cup of sugar. & nbsp; When the sugar is fully dissolved (put the

sugar in first) I steep the tea bags in the 1 quart of water for 20 minutes. I

remove the tea bags and then I add about 2 1/2 quarts cool reverse osmosis

filtered water to speed the cooling process. I also am anxious and need to get

my batch started quickly and this speeds up the cooling process a lot!!

& nbsp;

& nbsp;

My Kt that I made with a 16 oz bottle of KT from the drug store is almost ready.

After two full weeks I have a small mother forming on top and I took a straw and

carefully sampled the kt and it tastes ready to bottle. I saved the bottles from

purchsed KT so I will be bottling tomorrow. I also just recieved a beautiful

large scoby from one of our fellow list members Rae in Idaho and I will be

starting a new batch with that scoby tomorrow too.

That way I can compare kt brewed from a bottle with kt brewed with a scoby. I

know it will brew faster....hope they both taste delicious. I am hooked on the

KT flavor and I love foods, supplemens and drinks with health benefits!

& nbsp;

Good luck on your next batch!

Hello there,

I am in the process of fermenting my first batch of KT. It has been

taking longer then I was expecting--it' s been going for almost 16 days

and is still flat and a bit sweet. When preparing I had put the hot

pot of sweet tea in the sink with cold water to cool faster (i just got

so antsy!) I'm afraid I may have jumped the gun and added it to the

mother culture before the tea was properly cooled. Plus it's been

rather cool here in Minneapolis so I think that has slowed it as well.

So, I was wondering if anyone as made a concentrate of the sweet tea

and THEN add the rest of the cold water to it?

Also, I'm planning on doing the 2nd ferment today--I think the bubbles

will hopefully come with that and a little ginger :)

Thanks for any advise i get

Thanks for the reassurance Gayle! & nbsp; The bottling of the 2nd ferment is

complete. & nbsp; And the next time I will be making the RO ice cubes. & nbsp;

Ohhh Ann thanks goes to you too. & nbsp; Guess I need to read the entire posts to

see who has responded. & nbsp; I too share your passion for all things healthy and

good for the environment. & nbsp; KT is just another great thing to add. & nbsp;

Hope your 'experiment' goes well.

peace
