Thank-you for sharing with us, Frantz, I am glad to hear that you've finally found what works for you with flip-top bottles. I had read a recipe using piloncello sugar, and even went so far as to buy some, but have not tried it yet. The person that I read about it said it was really good as well, you've just encouraged me to do an experimental batch with it! hanks for the encouragement in that area! Incidentally, are there any others out there who have also used this sugar with their kt? I would really like to hear from you about this. It is interesting that you have the high heat of 85 degrees, and yet it took 2 weeks to produce a good carbonation that didn't fizz all over. I left one of mine to carbonate for 5 days, and had 1/4 of the bottle get lost down the sides. (This was a store bought kt bottle) I'm thinking that maybe your flip-top bottles were doing their job and burping themselves, and you just didn't realize it, and 2 weeks later you drank the wonderful tasting result?! You also mention that it takes a long time brewing, even in 85 degree temperatures, is it because you like it more vinegary than sweet? If perhaps you do prefer it that way (nothing wrong with that!) perhaps this is why you have had trouble having fizziness when you are ready to bottle up? When I have the heating pad on under my fermenting kt, it is pretty well a constant 82 degrees F. and it only takes about 5 days, and I'm ready to bottle up. I had this morning however, some KT that were left for 2 weeks and let me tell you it was an experience.. The tea was a Pu-Errh made with Organic Piloncello (Raw Cane Sugar).. This was one of the most delicious drink, not KT, DRINKS, I've ever had.. Just like Champagne and bubbly like it, a dry robust texture and taste. I had it well chilled,(Questions to the KT gurus: Does chilling the KT has any negative effects on the Probiotics ?). The bottle opened up with a loud pop but no volcano-like spills.. I think I will stick to this protocol.. 2 weeks with the flip-top has done it for me!! Finally KT the way I like it!!!My SCOBYs which came from Zoe W. produce baby SCOBY in one (1) day but brewing time is at least 10 days under really hot (>85 F) climate.. I have varied the amount of tea and sugar, reducing it to 6 teaspoons and 1 cup of sugar, it took almost the same amount of time for a relatively weak KT . I like my Kombucha to have a strong tea flavor, I use at times up to 15 teaspoons of tea... 10 days minimum and often 14 days... I am OK with that.. Guest guest Posted July 1, 2008 Report Share Posted July 1, 2008 just signed on here. would someone be willing to fill me in on just what are these " flip-top bottles " where to get them etc. is a picture possible? i brew with something called " organic dehydrated cane juice " which i'm guessing may be equivalent to piloncello sugar. i started buying it in bulk because it was the nearest thing i could find to organic white sugar (which i'd only run into once years ago in tiny pricey boxes). i like it a lot. it gives the brew a rich complex taste that i enjoy and works well with black or green tea. the kombucha organisms seem to like it too. usually get pretty good carbonation but it's inconsistent. Guest guest Posted July 1, 2008 Report Share Posted July 1, 2008 Hi Jane, piloncello is something a little bit different than organic dehydrated or evaporated cane juice (which is what I use with my kt.) Although not an expert on it, it is raw cane sugar, and is very dark, (having a higher dosage of molasses in it, and therefore I would suspect has a higher level of nutrients in it.) It has been shaped by a mold into what looks like a little bit like a bell, and there are 8 of these 1 1/2 in. big " bells " in the package I have (not very much at all for the price) I just opened my package to smell it, and I do believe I am right, it smells very much like molasses. Since I am not real fond of molasses, we will have to see whether I like kt brewed in it! Hah! I also buy my organic evaporated cane juice sugar in bulk by the 50 lb. bag, it is soo much cheaper that way. If I do decide I like the piloncello sugar, it will definitely have to be for only an extra special treat at times, because it is too expensive for me to use in 6 1/2 gallons of kt each week. I have heard that you can also find the pilncello sugar in the mexican foods section of a grocery store.
