Guest guest Posted July 6, 2008 Report Share Posted July 6, 2008 i've made beet kvass in a salt fermentation process using whey from yoghurt as a starter. you ferment the beets with a lot of water and drink the liquid. it's similiar to making sourkraut. i'm curious as to your results. I too have done a salt fermentation with beets (a basic beet pickle with raw beets, also similar to sauerkraut) and it turned out nicely. Jane, I'd like to know more detail about your use of whey from yoghurt as a starter, as I'm not familiar with using that for/with beets. Happy fermenting!
