i've made beet kvass in a salt fermentation process using whey from yoghurt as

a starter. you ferment the beets with a lot of water and drink the liquid. it's

similiar to making sourkraut.

i'm curious as to your results. ( beets have a lot of sugar to start so i wonder

if it's really necessary to add more) could you describe what you did in more

detail and what seems to be happening with the beets? what do they taste like

now? what does the liquid taste like now? and how acid was the kombucha you

started with? are you keeping it in the fridge? is there any kind of kombucha

type blob formimg? did you use beets raw or cooked?

etc???

oh yes, I'm definately interested in this... how fascinating, and I

do love beets. I too have done a salt fermentation with beets

(a basic beet pickle with raw beets, also similar to sauerkraut)

and it turned out nicely. Jane, I'd like to know more detail

about your use of whey from yoghurt as a starter, as I'm not

familiar with using that for/with beets.
