Guest guest Posted July 4, 2008 Report Share Posted July 4, 2008 I was trying to mention to Dana, that I know that I get a beautiful thick scoby in my quart size scoby hotel after a number of weeks (with double coffee filters to slow down the growth) but because of the really acidic starter tea in it, it really gets nice and thick. Of course we also get a nice little scoby on each of our finished kt after bottling up and carbonating. I noticed that Barb said it set out with a lid on it for 6 weeks, and am wondering if since she lives in Florida, if she doesn't have air conditioning with temperatures of 70 to 75 degrees F. in her home, which is probably why I don't have problems not feeling the need to burp my carbonating bottles, but I do notice that they carbonate much faster with a higher amount of carbonation, when the temperatures raise to 80 and 85 inside the house. (We don't have air conditioning since there are so few months that it gets really hot here, in Alaska) Am also wondering how much liquid was in that jar, that might have had something to do with it not exploding, as well. Any answers for us, Barb? It was also left in Georgia at our cabin for the six weeks. It gets cool here at night time and as long as the cabin is closed up it stays about 75 to 78 degrees due to being in the woods. I guess there isn't a real seal on this type screw top jar and I don't understand how it stayed so white and nice as there was no KT on top of it. As long as it's covered to keep buggies and mold spores from getting in- and there's tea underneath the scoby, it will be fine. The scoby is like a sponge. It sucks the moisture up from underneath. Isn't that cool? Mine start out with starter tea on top, as well as mixed in with the sweet tea, and by the time it ends up being ready to bottle up, there isn't any liquid on top! Guess if I would have thought about a little longer- I might have been able to clear the cobwebs from my blonde head, snicker, snicker! I guess I do remember reading that the scoby is like a sponge on the internet, so much information, where will I ever put it!!!!!!! O.k. it's time to go do something else now that I've admitted I'm a blonde! (my husband says I'm not a DUMB blonde- only sometimes-lol!) Somebody recently said someday I'd get tired of talking about kt, we'll see how long it takes, as I find that some things never grow old, or they shouldn't anyway! lol!!
