Hi :-) I shouldn't dilute the KT, but leave it as it is. The taste changes completely in the fermentation process. If it's still too strong then, you can always dilute when you drink it. Only on the top and mold is always fuzzy. The bits of coloured gooey stuff which can also be string is completely harmless and consists of yeast bits and tea pigment. Nothing to worry about. You should have seem mine yesterday. When the brew is done I wash such a scoby in KT (not water!) and strain the liquid through a tea strainer. After fermentation my KT has only the slightest of fizz - after a week's bottling whooooo, it's really come alive like the fizziest store bought coke (I hate coke BTW ;-) I really think that your brew is headed for success.
