Guest guest Posted May 13, 2008 Report Share Posted May 13, 2008 Lu...I would say that if you trust your raw sugar enough to use it for other purposes without boiling, ie on top of oatmeal or in a glass of lemonade...there is no need to boil it for Kombucha. On the other hand I never let my brewed tea sit past the time it is cool enough to introduce the SCOBY and starter liquid. Before that I add the sugar at the point where I remove the tea leaves/bags and the tea is still warm enough to help facilitate dissolving the sugar. I would not trust, for myself, making excess tea that I am not going to use immediately.
