Lu...I would say that if you trust your raw sugar enough to use it for other

purposes without boiling, ie on top of oatmeal or in a glass of

lemonade...there is no need to boil it for Kombucha.

On the other hand I never let my brewed tea sit past the time it is cool

enough to introduce the SCOBY and starter liquid. Before that I add the

sugar at the point where I remove the tea leaves/bags and the tea is still

warm enough to help facilitate dissolving the sugar.

I would not trust, for myself, making excess tea that I am not going to use

immediately.
