Guest guest Posted June 13, 2008 Report Share Posted June 13, 2008 Hello there, I am in the process of fermenting my first batch of KT. It has been taking longer then I was expecting--it's been going for almost 16 days and is still flat and a bit sweet. When preparing I had put the hot pot of sweet tea in the sink with cold water to cool faster (i just got so antsy!) I'm afraid I may have jumped the gun and added it to the mother culture before the tea was properly cooled. Plus it's been rather cool here in Minneapolis so I think that has slowed it as well. So, I was wondering if anyone as made a concentrate of the sweet tea and THEN add the rest of the cold water to it? Also, I'm planning on doing the 2nd ferment today--I think the bubbles will hopefully come with that and a little ginger Thanks for any advise i get Angie Quote Link to comment Share on other sites More sharing options...
