One of the things green tea catechins can do is detoxify by connecting with poisonous substances and harmful heavy metals (lead, chrome, mercury, cadmium, etc.) and dissolving it. Green tea tastes much better when prepared at 185 degrees instead of boiling. It's not really necessary to boil the tea. Further, green tea needs to steep for only 2-3 minutes in order to begin tannin release. My favorite way of making KT (very successfully I might add) is to steep the tea in a small amount of water, essentially making a concentrate. Dissolve the sugar in boiling water. Put the tea in the crock/prep jar. Put the sugar solution in the crock/prep jar. Top off with room temperature or cooled water. This eliminates the need to let the tea cool down.
