To a certain extent the strength of the fresh tea is subjective. You may like to use six tea bags per gallon...I may like to use nine or sometimes ten. So I would not really worry too much. If it keeps bothering at the back of your mind...just remove some of the brew and replace it with stronger cooled sweet tea. Do be sure there is some space at the top of you brew container...you do not want the brew touching the cover, of course. Good luck with it! Gayle Mistake...too much water perhaps Hello, I was brewing up two batches of Kombucha yesterday and I think I got too happy with the water. I made 3 quarts of green sweet tea to divide between two batches and when adding my fresh water to the concentrated sweet tea, I think I added too much, perhaps two cups too much to each batch. I poured more than one cup of prepared Kombucha over each SCOBY (perhaps 1 ¼ - 1 ½ cups), but I am wondering if I need to make more sweet tea or should I just let it ride?
