Hi Jay....

Congratulations on your family of SCOBYs!!

Unfortunately, good results do not occur with refrigerated SCOBYs. Even

less so with frozen!

The best way to store them seems to be what you are doing, and yes, they

will continue to thicken! Just be sure to keep them nicely swimming in

finished KT.

It may be time to consider giving some away or utilizing the extras in other

ways. You can chunk then blend them up into SCOBY cream for personal use

(see files section) They can also be used as a washcloth in the shower

(flannel for our UK folks). They do nicely in compost piles, flower beds

and gardens, especially if you have acid loving plants like blueberries,

peppers or impatiens. Just google 'acid ;loving plants' for info on that.

So, you see, no need to just throw them away!
