STORY 1)

Last week I sold a box of this incredible pork to a total newcomer to

Traditional Foods. She called to say how amazing it was but also that she tried

the brats and had set her grill on fire! Then she said she grilled some babyback

ribs....and set the grill on fire! Later some porkchops....and, yes, set the

grill on fire! Whoa..... It's a whole new (old) way of cooking.

She said that she's been grilling forever but never had this problem with

" grocery store pork " . Hummmm.... Maybe there is a reason for that.... After I

got done laughing, I said " hey it cost me a lot of money to get these pigs up to

330 to 360 pounds, quit wasting my good fat! " I was not kidding about the cost,

but cooking with good, wholesome and healthy fat takes a bit of getting used

to. One SECRET of mine, especially with bratwursts, and chops is that I cook

them about 80% of the way in the stove or oven, then transfer them to the grill

for the last few minutes. Much less fat and flavor is lost, they get done more

quickly, they are juicier and less fat is burnt on the coals or grill element

(could be dangerous).

This pork is trichinosis-free (freezing kills it dead anyway!) so I've gotten

used to grilling these thick chops like a steak, sort of medium-rare. I love the

flavor and freshness, you might want to try it, at least there is absolutely no

need to over-cook pork grown like this!

It's good either way though, if you want to try the opposite, put the frozen

chops in the crock pot with a few onions, carrots and other root vegetables with

a little salt and pepper. Come back in a few hours and you will not believe the

results!

STORY 2)

AL WATSON, author of " 21 Days to a Healthy Heart " and " Cereal Killers " was at

our booth at the Living Green Expo. He worked hard the whole time, signing

books and giving people health advice. I overheard one man sort of challenge

him, the man was on statin drugs, blood thinners and was diabetic but he was

incredulous that " breakfast cereals " were being besmirched. " How could that be,

my doctor just put me on cereal (as " heart-healthy " )? " he asked. Scratching his

head, and wondering what he could eat, he figured he had Al cornered and said,

" So, what did YOU have for breakfast? " Al laughed out loud and said, " four eggs

basted in lots of butter!!! "

You can buy Al's books on Amazon, and they are truly refreshing, accurate and

valuable to anyone, they also make incredible gifts for people who are

bamboozled by doctor-speak,

or for those who have never heard " the rest of the story " about cardiovascular

disease, stroke, diabetes and obesity!
