If you are intending this as a SCOBY hotel ... I would still maintain the

cloth cover, just be sure to add new KT periodically. If you cover the jar

it changes the type of reaction - there are aerobic and anaerobic types of

reactions - I just think it is better to allow it to breath. Just my

opinion.
