Hi everyone, I have Heritage Red Wattles crossed with Berkshire hogs

available. All feed is certified organic and always soy-free. The hogs

were born on my farm from sows fed and taken care of outside, the same

way. They have lived outside, even through winter (with bedded down

sheds to go into, of course) and receive organic veggies all winter and

spring. Whenever there is grass growing they are out on organic

pastures – which was early this year! Nothing added; no chemicals,

antibiotics, vaccines or wormers. No tail docking or ear notching.

Just happy piggies running around through rotated pastures.

We can deliver to a butcher of your choice, or we can deliver it

processed to your home from our USDA butcher. If you want the No

Nitrate Added, including No Naturally Occurring Nitrates, in the form of

celery powder, we can bring the hog to that butcher for you. I believe

this is the only butcher in the MN-WI area that smokes totally nitrate

free. If you have attended some of the raw milk events, you might have

tasted our summer sausage, bologna or wieners there. Bacon and ham

smoked the same way is available. This is different than the celery

cured ham; it has a more roast pork flavor due to the lack of nitrates.

But you could also have a more traditional cure if you want.

Available by the whole or half. When ordering by the whole or half;

Organs, necks, and heads (to make head cheese) are available. Brains

are a possibility depending on where it is processed. USDA will allow

pork brains in most cases. $3/lb hanging weight (approx.100-125 lbs)

plus processing. Email me off-line if you are interested.
