I'm going to have my husband do that for us, we are so sold on on using our crock, that I'm ready to not use the gallon size jars at all, " continuous " brewing is soooo much easier than using the gallon jars, and WAY less mess, not to mention the ease of bottling up-what a breeze!!! If anyone is interested in knowing what the continuous brewing method is, I would be more than happy to send the directions I just recently wrote up, which I think was easy to understand, wasn't it, Rodrick? Just let me know if someone wants this information-if I had known the difference when I was starting out, I would have just started out with this method-that's how sold I am on it!!! In addition I would like to include some info that I found helpful and that is you can draw off 20 to 30% of your brewed tea daily and adding the same amount of fresh tea back into the brew and it will be ready again in about 24 to 26 hours giving you a fairly consistent taste. But, if you have a glass container like mine (the one everyone kept talking about from Target and other places) its super easy to maintain. If things get off balance, you could bottle a batch, rinse w/ vinegar, cut your scoby down, whatever, then just start over. They say the beneficial acids are fully realized around 30 days, so once you get past that point I guess all is well. Its just easier this way--easier to do it once or twice a week rather than every day, easier to label them all at one time, easier to keep track of batches, etc. I would think, as long as you are in a rhythm, it really shouldn't matter how many days there are between bottling. As long as the balance is ok, and the sweetness is to your liking. I also just joined because I wanted to be able to read through past posts to learn what I'm doing wrong. Today is October 20. I made my first Kombucha batch on September 19 per instructions found on many webpages (3 qts. filtered water; 6 Black organic Whole Foods teabags; 1 cup of raw sugar; one 16 oz. bottle of GT Kombucha (original)as my starter; covered my glass jar with a coffee filter/rubber band; everything was followed to a " T " ). When nothing changed after about 10 days, I suspected that my NJ kitchen counter area may be too cold so I moved it to our gas oven where the broiler pilot light underneath provides a constant warm temperature. Last week when still nothing has happened, I brought it up to our bedroom where it is always at least 75 degrees, sometimes more (I thought perhaps the fresh air would be better than the oven although the oven is rather inexpensive and hardly insulated, etc.). In that jar is the little scoby found in the bottle of GT's Kombucha only. The level I started with left a mark on the jar and shows that the mixture has evaporated by an inch. I noticed the jar has about a 1/16 of an inch level of silt at the very bottom, but absolutely nothing more. When checking for smell, I noticed it smells of slight vinegar and tea. When nothing occurred with first batch by October 1, I made another batch using the same recipe as above but three Black and three Green teabags; one cup of white sugar and with one cup of white distilled vinegar as my starter. That jar was placed in the oven, and still today, nothing. The only thing I can see is that the bottom has what looks like sand or grit. Last Friday, October 17 I poured a 16 oz. bottle of GT's original Kombucha in a small pyrex dish covered with a paper towel/rubber band and placed it in the oven utilizing the pilot light. (I'm trying this per a post on this forum last week on starting a scoby from a bottle of KT.) I put the dish in the oven because the outside temperature has dropped and we haven't turned on the heat yet. There's nothing to see yet as it has only been three days. So, I have three batches of varying KT's but I'm pretty sure I will need to chuck the first two. I'm thinking I should try to make yet another batch using the crock pot method I read here today to ensure a constant temperature and leave it undisturbed. If okay, I'll be asking Rodrick Shank off line for that recipe. Anyone, feel free to jump in here to advise me. Should I request a full-fledged scoby from someone if available, or do you think I should keep trying to get a " specimen " either from the three other batches, or like I said, chuck the first two and start over while hoping the GT specimen develops into something I can use. ly, I haven't seen anywhere where someone had this much trouble making the tea. Guest guest Posted October 20, 2008 Report Share Posted October 20, 2008 i've been continuous brewing a few months now, and i too only bottle once a week or two. the only time i had trouble with yeast overgrowth was during the hottest part of summer and my brew was in an non-AC part of the house. i keep a closer eye on the temp now and have had no problems.
