Common in this country @ the turn of the century :-)) But it does seem as if you can use what the heck you like with 2 common provisos. 1. There *must* be a percentage of " Proper tea " from Camellia Sinensis (The stuff the VAST majority of teas are made from. 2. If you mess about with flavo(u)rings I prefer mine " neat " then you do it *after " first ferment, i.e. after de-SCOBYing and during bottling. . N. England. Guest guest Posted August 19, 2008 Report Share Posted August 19, 2008 Hey ! Thanks for the reply, and thank you to everyone else for the great replies. I've been brewing approximately 24 hours. Ha ha! I started my first batch last night. I found an awesome jar at Wal-Mart yesterday. It has to be close to 4 gallons because I made a 2 gallon brew and its right at half full. It's made by Anchor Hocking, which I hear is supposed to be a great glass for Kombucha since it is of good quality. I went with a mixture of 1/3 green, 1/3 white, and 1/3 black tea. It seems a bit dark, so next time I might use mostly green with a little white and black mixed in. I have done extensive research over the past few weeks on the methods of brewing, so I know to stay away from flavored teas and teas with additives. I, too, will most likely end up being a purist. I may play around with some minor flavoring in the second ferment in a few bottles. I have a case of 12 swing top Grolsch style bottles on the way, so I'll have plenty of room for experimentation! I have another Scoby since I bought two on ebay. I'm waiting for my other glass container to come in. It's an almost 3 gallon glass beverage dispenser with an all plastic spigot. Late entry ;-) Hello every body I'm a newbie here and to kombucha tea also I just started making the tea at the moment I'm brewing my 3rd lot and the mother culture is on top but the baby Is growing on the bottom is this ok or is something wrong with it? Guest guest Posted August 23, 2008 Report Share Posted August 23, 2008 Hi EveryOne, Kombucha colonies always form on the surface of the liquid....the " mother " or original kombucha may sink or go sideways or float but no matter where the starter kombucha is the new Kombucha will form on the surface of the fermenting KT. If the original kombucha colony is floating too, it is sometimes difficult to see which is the baby and which is the mother.....
