They will eat any remaining sugar in the KT and leave the liquid an absolutely perfect starter, lovely and vinegary. When the time for a new brew comes I take my starter liquid from the scoby hotel jar and afterwards top it up with some fresh KT (not sweet tea!). Once every few months I clear the scobys out and pour the dregs away. Any old floppy scobys go on the compost and I only keep the firmest and nicest looking ones (for giving away). > fridge (my fridge is already *really* cramped) or on the counter? Good news! I put a double folded paper towl w/ a rubber band over the top to cover the jar. Several new scobies have formed in the hotel since then. Since the jar is much smaller than my continuous brewing container, I have to fold the scobies from that jar. Right now, I only want to keep one scoby hotel and it's full. Any extra scobies I'm pulling out of my CB jar (I'm not letting thick scobies form b/c it seems to sour my KT too much for me), I'm either composting or making into " cream " for my skin. For awhile, I had 3 scoby hotels and it seemed like the scobies might start taking over the house. LOL. I had to cut it down somewhat. > > Is there someone who can tell me how to start a SCOBY hotel? The size of the CB scobys will have to be considered when you make your hotel since you will be taking them out of a CB crock. Either cut them into quarters so they fit if you use a smaller jar for this, or get another large crock to use just for the scoby hotel. I like to see mine, so I use a gallon pickle jug. I tried putting a crock-sized scoby into the hotel I had already started without cutting it up, and I see that the jug is being swamped and that big one is straight up and down and growing out from the sides! If you can picture that. I will have one massively thick scoby soon. For now I just poured tea up to the top to make sure it had enough to eat. I am not sure what I will do with all that. We are getting our first big snow storm. We have about 5 inches so far, so as for fertilizing my flower bed with them, I don't suppose there is a need right now.
