Use of scoby in salad dressing

This use of spare scobies has probably been mentioned before, but may

be worth mentioning again, for those who have run out friends and

strangers to share some of the never ending supply of scobies. Like

many, I do offer free scobies on line, but sometimes no one comes for

a while. So I have started to put scobies in the blender, as (partial)

substitute for lemon juice or vinegar, when making various salad

dressings. Scobies lend a creamy consistency to the salad dressings

which I quite like.

One of my favorite recipes is the orange/ tahini salad dressing and

includes: orange juice, tahini, flax seed oil, garlic, dash of

Himalayan or sea salt, dash of cayenne, lemon juice and / or scoby.

Optional ingredients : tamari, parsley, dill.
