Might be those vinegar eels. If that is the case, you need to dump the

batch and the scoby.

Dear Evin,

I can assure you, that the 'stringy weblike stuff' you describe is

not due to vinegar eels. You have a very common and normal accumulation

of yeasty bits with tea pigments (grey/black/brown) which are not

only within the parameters of the normal, but usually indicate a good

and tasty brews. Congratulations!

So, your brew is normal and probably very delicious, just ooglified ;-)

Please do not worry, !

Vinegar eels are sometimes found in unpasteurised vinegar, and if someone

uses that kind of vinegar as starter liquid (it is NOT recommended!)

you don't only get the acidity=good, but also the Mother of vinegar culture

=not good, as you have a Kombucha culture and the 2 are not the same, and,

at the worst vinegar eels.

These are actually harmless and can be easily strained out of the KT,

so there is nothing to worry about, really. Vineagr eels are nematode worms

qhich feed mainly on dead bacteria.

Vineagr eels are often deliberately cultured because they make excellent

food for aquarium fish.

Soooo, they aren't nasty critters at all!

I can assure you, that the 'stringy weblike stuff' you describe is

not due to vinegar eels. You have a very common and normal accumulation

of yeasty bits with tea pigments (grey/black/brown) which are not

only within the parameters of the normal, but usually indicate a good

and tasty brews. Congratulations!

So, your brew is normal and probably very delicious, just ooglified ;-)

what you describe does not sound at all like vinegar eels. just do a web search

on them and view some of the pics. here is one link to a guy who grows them on

purpose, to feed his fish babies.

Alright I am pretty sure now that they are not vinegar eels. They

didn't look like the pictures on happyherbalist.com. This morning I

checked and all the webs have settled to the bottom. Maybe it was just

because that was the first time the brew was disturbed. I guess we can

chalk this one up to newbie panic. Thanks for all the responses.

Hi, Evin,

I'll bet you're seeing extra yeast strings, which you

can see pictures of on Ed's HappyHerbalist site.

I spoke with him about this a while back, and here

is the essence of what Ed said: Extra yeast strings

will cause a yeast-weighted Kombucha, which tends to

be more carbonated. Lots of people prefer their

Kombucha this way. IF you want less yeast, just strain

your starter/bowlful through a coffee filter, and continue.

I had one instance of this " extra yeast, " which I filtered

as suggested, and that was the end of those extra, fine

filament strings of yeast.
