yes, you seem to have the general idea of continuous brew, and your amounts

sound reasonable. you start drinking it whenever is tastes good to you. i did

continuous brew for awhile, but found the frequent tending too demanding, so my

cont. brew container is now just a regular brew container, except, i leave about

a quarter of it when i harvest, so it is ready before my other jars are and i

can sneak a little whenever i want. it gives me a nice way to keep tabs on what

is happening in my other jars without disturbing them (they dont have a spigot

and my CT jar does), and because some stays in the jar each time, i hope i am

getting the long brew benefits of the continuous brew.  you may find that

adding 2 quarts of fresh tea at once makes your tea a little sweet the next day,

so you just adjust your proportions as you go. i tried the CT method in the

summer (in Oklahoma that means hot and muggy), so my jar got pretty yeasty and

i got a baby scoby

in my spigot!, so i emptied and drank all that batch and started over. it is

all an adventure and you should keep experimenting until you find what is right

for you. i can honestly say that i only had one " bad " batch, and that was

because i secondary fermented with a grape juice containing sulphites, which

when fermented produced sulpher compounds that smelled - yeeuck! but after doing

some researching, found it wasnt harmful, and after it was open awhile it

dissipated, so we actually drank it. if its too acidic just use it as you would

any vinegar, a friend just gave me a gallon jar with KT she had let go too long

and was afraid to drink. i tried to convince her that it was ok and had lots of

uses, but she didnt want it, so i brought it home and have been thinking of all

the good things i can do with it, and for dinner tonight made a coleslaw

dressing with mayo, sour KT, garlic, salt and pepper and it was yummy!

Subject: Beginning Continuous Brewing

Thanks to this group, I have been successfully brewing single stage

KT since this summer. I received a 2 1/2 gallon glass vodka infusion

container with an all plastic spigot for Christmas and so I'm ready

to start continuous KT brewing :o)

I read the files and checked out Happy Herbalist, but I want to make

sure that I make the switch over from single stage KT brewing to the

continuous method. I have my 2 gallon container that has KT with my

SCOBY that should be ready to drink on Wednesday. I started it last

Wednesday. So this Wednesday, do I just take that finished tea along

with the SCOBY and put it all in my new 2 1/2 gallon container and

then add a feeder solution of room temperature sweet tea (2 quarts

water, 1/2 c. sugar, and 6 t-bags) and begin drinking it when????

Would I be able to have 1 quart daily replenishing it every 2 days

with my feeder solution of 2 quarts sweet tea?

Do I drink some, replenish it, and then drink some the next day?

Am I kinda getting this or am I way off?
