How long will a scoby be good

How long will a scoby be " good " ? I have had a bunch of them stored in

my refrigerator for several months now and haven't used them as I got

out of the habit of making kobucha. I want to start making it again

but wasn't sure if I would need a different scoby.

Hi Dree,

For future reference, the best way to store SCOBYs is at room

temperature in a glass container and covered with KT. The container

should be covered, but not completely airtight. As long as the KT is

replenished as evaporation occurs they will stay viable indefinitely

at room temperature.

That said, in general SCOBYs do not do as well stored at refrigerator

temperatures. Your stored SCOBYs may brew, but it will possibly take

a few tries to get the microflora back in balance. So, to answer your

question, you could try the SCOBYs you have and see how it goes, or

you can try with a SCOBY from a different source.

I posted earlier about needing a new SCOBY and about yeast over growth in my

KT...I had some SCOBYS and thought I was storing them right in the

fridge...later found out about the SCOBY hotel described below...I think this is

where a lot of my problems stemmed from...not being properly stored.  Thanks for

the confirmation!
