Opinions differ, there are those who treat them like oysters and " Chug 'em down " then there are the chickens (Like me) with no great love of oysters, who strain into the glass through a small, plastic strainer. Guest guest Posted November 24, 2008 Report Share Posted November 24, 2008 my experience has been that if you leave a little space at the top, then you get better carbonation, but you are also more likely to get the baby scobys. personally, i like kt oysters, so am not bothered by them. if you want bubbles, but just cant stand the thought of that slimy oyster in your drink, you might want to groom your brew to be slightly yeasty. you get better carbonation with less scoby. it seems to me that adding juice, and esp adding ginger to the secondary ferment cuts down on the baby scobys too. experiment with temperature during the second ferment too, that might help (lower temp = less scoby) dl ________________________________ From: Kane <brainnake@...> kombucha tea Sent: Monday, November 24, 2008 2:37:28 AM Subject: Re: Mini scoby during 2nd fermentation Morning/Afternoon/ Evening (Delete where inapplicable) " Ooh arr Jim lad!
