But you're probably right, the bacteria side is dominating. At least that's what it seems like to me. Sometimes I notice the same thing right after I clean the yeast build-up out my brewing containers. Check out these wonderfull pics from Margret. The last batch I had tasted and looked a bit.. funny. Perhaps it's just that I use exclusively green tea at the moment, but I noticed a blackish growth inside the scoby and hanging from it... it wasn't mold because the batch wasn't rancid... I'm thinking perhaps the bacteria side is dominating and I need to increase the amount of sugar I put in my brew. I use 1 1/2 cups per gallon and a half of tea. Help?
