Hi , With continuous brewing the growing scoby on top will get continually disturbed and that disturbance means, that you will never grow that beautiful beige disk of your dreams. Funnily enough, on harvesting 5 different brews which I had overlooked and left to their own devices, 2 of the batches had formed those smooth full-moon-like disks. The secret is NOT to disturb the brew at all for about 2 weeks. You could put some KT aside in a glass with a diameter you would like your scoby to be, cover and leave in secluded place and then forget about it. When you remember it again after a period time, you will be surprised about the lovely scoby that will have formed across the top. Although lovely SCOBYs are nice.... they are not at all necessary in order to attain a good brew, but it is always possible to create one if desired.
