We are so busy here on the farm with all the normal work plus with the raw milk sales increasing. Seems strange in this time of economical breakdown. :-) But really, it's wonderfull. Thank you, all, who are buying and supporting the cause of Raw Milk! And, of cource, organics and local. Back to the kefir, Joan. You are right about the kefir not being mature enough on the first batch. I can easily believe that, especially after the stress of shipping, and also being in a new environment and different milk. They came from Raw Organic 5% Jersey milk and were thriving beautifully, but after they adapt, they will work in pastuerised milk as well. I would definitly give it a few days. You may be expecting it to be too thick, unless you've had some from the store, and even then, it might have been different. When we make it, it is definitly thinner than yogur. More like a drinkable yogurt or even thinner. When you have too many grains or over ferment it, it can become more liquid, as more of the butterfat is digested and turned into acid by the many strains of bacteria. Very similar to kt, except the kt strains of bacteria and yeast use glucose instead of lactose, that the kefir uses. Glucose, lactose, fructose.... all forms of sugar. The milk does not HAVE to be room temperature when you add the kefir grains to it. We use our raw milk right out of the frige most times. I'm not sure how it would do with pastuerised. I think the room temp would help to start it off fast and not stunn the microbes, but we have SO many grains, we never need to worry about that. :-) One thing that will make your kefir thinner, is stirring it in the middle of fermentation. It seems, if you break up the curds and then let it ferment more, it will get thinner. So if I were you, I wouldn't stirr it untill you are ready to pour it out of the fermentation container. I strained my first batch after 24 hours and it was not mature enough I realize now. It wasn't very thick to begin with, but I thought that was okay being it was the first batch. However, the taste wasn't great either. So I have my second batch going and it will be 48 hours old (unstrained) at about 11:00 pm tonight. I do see separation of about an inch of grains from the milk, with just a tiny bit of whey starting. It looks thick and lumpy on top, but after stirring it, I realize this one is also thin after almost 48 hours. Should I go one more day? Or should I strain it today, and maybe my third batch will be as it should? Also, a more important question. The milk added to the grains should be room temperature, right? Wish me luck! Guest guest Posted March 23, 2010 Report Share Posted March 23, 2010 Hi atonyathehum, One nice thing about making your own kefir is the you can control just how sour (tart) the kefir is by shortening or lengthening brewing times or adding/subtracting amount of milk or using more/less grains er batch.
