Using filtered water

I just want to share an experience. I've been brewing Kombucha

successfully for about a year and a half. During this time I have used

great natural spring water, filtered by mother Earth and delivered to

my door via 5 gallon water bottles. A couple weeks ago I ran out of

the water early and went to Whole Foods to buy some filtered

Minneapolis city water. I noticed a slight difference in taste but it

was okay. This month we ran out of water again and I decided to

experiment using our tap water, which isn't too bad but it does have

the typical chlorine/fluoride etc. The Kombucha tasted AWFUL! It's

like all the bad taste was maginfied ten-fold making the brew

undrinkable. Needless to say today I scrapped all my Kombucha brews

and need to start over.

I have read the importance of using filtered water (along with organic

ingredients) but was a little arrogant. I just want to share this for

anyone tempted to make my mistake. I'm also curious to know any others

experience in this.
