Guest guest Posted November 12, 2008 Report Share Posted November 12, 2008 Hello Group, I know that mold is fuzzy and of various colors and that it grows on top of the newly formed floating scoby. After a recent brew, I went to rinse out my gallon glass jar and saw something I have never seen before. It was solidly imbedded on the bottom of the jar where the side of the jar meets the bottom. It was about an inch and a half long by about one half inch wide. It was white in color with a good amount of black specks running through it. It took the pounding force from my water spigot to dislodge it. What the heck was this? Does mold grow at the bottom of a brew as well as on top?? Guest guest Posted November 13, 2008 Report Share Posted November 13, 2008 Hi Lawrence and EveryOne, This is the first I have heard of something like mold growing on the bottom of the fermenting jar....usually just spent yeast is found there....however while mold usually grows on top of the colony, it can also grow within the colony and perhaps other places as well so that is why we recommend that if you see anything that looks like mold fuzzy, different colors, you throw everything out, clean well and start with new Kombucha Colonies and starter tea. It is not recommended to use Kombucha Colonies or KT that have been exposed to mold. Usually the Kombucha tea would be too acidic to support mold growth but if at least 10% starter (finished KT) is not added from the beginning it is possible that the KT was not acidic enough to prevent mold from forming in the first few days... If the growth at the bottom of the jar was brown and stringy I would say it was probably spent yeast colonies but as you describe it as white with black spots I have no idea what was growing there. Time to throw it all out and start anew. Just a reminder everyone, it is always good to keep spare Kombucha Colonies and starter tea as a " backup " in case something happens to your main brew. Also good to share with friends and neighbors so that you can get new Kombucha Colonies and starter tea should the need arise.
