There is a document in the files section of the website titled

" Continuous brewing system for kombucha.doc " .

The URL for the files section is below.

Please read through it and then come back with any questions it does

not answer for you.

Other than removing just a percentage of the finished tea and then

replacing it with new sweet tea, the procedures are the same. As

always, KT is done when it tastes done to you.

How soon you will be able to harvest your continuous brew is entirely

circumstantial. Just as some single brews take only seven days and

others up to three weeks, so it is with continuous brewing.

When it tastes good harvest and replenish. When it tastes good again,

harvest and replenish. And so it goes. In time you will know the

rhythm of your continuous brew. There are no hard and fast rules.

So, just go with it and see where it leads you!
