Here's a recipe from " Special Diets for Special Kids " for Mock Cheese. It has

no yeast or soy:

1-1/2 c. water

5 T. Agar Flakes (found in health food or Asian Stores)

3/4 c. Cashew pieces, cashew butter or tahini (or a combination)

1-1/4 t. Salt

2 t. Onion powder

1/4 t. Garlic powder

1/4 c. Pimentos

2-1/2 T. Lemon Juice (must be fresh squeezed)

Combine water and agar in a small suacepan. Cook over medium heat, stirring

frequently until boiling. Reduce heat and simmer for 5 minutes, stirring

occasionallly.

Combine other ingredients in a blender or food processor. Add the hot agar and

water, and blend on high for 1-2 minutes, stopping to stir when necessary.

Pour into mold, or in an 8 " X8 " pan lined with plastic wrap. Chill until firm.

This cheese is firm enough to be grated, but freezing it for a time will make

grating even easier. For softer cheese, reduce the amount of agar to 4

Tablespoons; for a spread reduce it to 3 Tablespoons; for dip, use only 2

Tablespoons.
