I checked out some controlled studies on the web and found several that concluded that xylitol does not contribute to the growth of yeast. Actually, some strains of Candida actually make xylitol as a waste product! Here's a link to an AIDS information website (not connected in any way with marketers of xylitol, as far as I can tell) that relates a study which compared yeast growth in groups of immune-damaged mice - one group was fed xylitol, one fed glucose, and a third (control group) fed neither: http://www.aegis.com/pubs/catie/1994/cati4703.html Hope that helps.
