It could be a regional thing because there's no aluminum in the baking soda here in the PNW of the USA - it's pure sodium bicarbonate. But then there's also not a prevalence of baking ammonia here, nor of potassium bicarbonate or other interesting leavening agents. Soda aluminum sulfate is an inorganic chemical that's commonly referred to as soda alum.
