Dana Carpender, the author of many low-carb books, recommends using Guar

and/or Xanthan Gums as thickeners. I use frozen fruit (bananas,

blueberries, pineapple, strawberries) or ice. Sometimes a dollop of fat

free plain yogurt or cottage cheese.
