Letting it sit and then skimming doesn't work very well once the milk has been cooled and stirred in the bulk tank. It takes forever to separate, and making butter from cream that still has a fair amount of milk suspended in it seems to be more work. The modern countertop models I've found don't appeal to me much; they're $300 and up and mostly plastic, and several times that much for " industrial " all-metal models. So I'm watching Ebay for the old-style metal ones (preferably hand-cranked), but people selling those often want collector prices. Any recommendations, or pointers to one for sale?
