I would get the book, Dangerous Grains though asap, as it makes so much sense and gives so much direction, the diet will be easier to follow. Just my thoughts I never knew how serious having a little bit of gluten would be, if you are intolerant of have celiac, until I read this one. Kathy, you asked what my favorite brand of pasta was/Here it is. Any Tinkyada brand noodle is awesome! You will not be able to tell the difference, if you cook it to directions (don't do the enery saving one, where you turn the pot off and let it cook in hot water, it gets mushy) this stuff is so good my Italian husband told me to throw all the other stuff out and make this for the family, as you cannot tell! I just made lasagna last week. The other brands were very gritty, or corn like, or mushy. Yuck This has been rated the best of all pastas, and I know why.
