Guest guest Posted December 8, 2008 Report Share Posted December 8, 2008 and everyone else that likes to try new things; I'm posting the recipe for Mandel Bread (pronounced Mondel): 3 eggs Pinch of salt 1 cup sugar 1/2 cup vegetable oil 1 teaspoon vanilla 1 teaspoon almond flavoring 2 1/2 cups flour 3 teaspoons baking powder 1 cup sliced or slivered almonds (blanched) sliced fruits (optional) Preheat oven to 350 degrees F. Beat eggs until very light. Add the salt and sugar and continue to beat. Add the oil gradually, beating well after each addition. Then add the vanilla and the almond flavoring. Mix well. In a large mixing bowl, sift the flour with the baking powder; add the almonds and mix. Pour about a quarter of the dry ingredient mixture into the egg mixture and combine until well blended. repeat until the dry ingredients are mixed in thoroughly. Grease and lightly flour cookie sheets or shallow baking pans and set aside. turn the dough out and form long loaves about 2 1/2 inches wide and 1 inch thick. Bake for 20 to 25 minutes. Remove and cut at an angle while still hot. Place on the baking sheet again and return to the oven to brown, for about 10 minutes. Just so you know, Mandel Bread is very much like Boscotti and good for dunking in coffee, tea or anything else you like. Enjoy! Take care and be well.
