I joined the group a while ago so I could lurk for a little while before jumping in, and now that the new year is here, I suppose it's time to buckle down and do things by the book. (I just got back from a two week visit to America, where I indulge in all the scrumptious (and usually high-fat) foods that I can't get here in Denmark!) I'm planning to start my challenge on Monday, Jan 7. I did it once before, my last 12 weeks living in the States, before I moved here to be with my now-husband. In reference to the Danish study, low-fat and no-fat dairy products are near impossible to find here in Denmark, along with low-fat versions (that are both healthy, i.e., not pumped with sugar, and palatable) of most other things. That's been making it really hard to find a variety of food for my challenge. Despite the fact that the country is almost all coastline, the selection of fish is not very good, though we're overflowing with shellfish (expensive, though!). Lowfat cheese and whole wheat tortillas/pasta are pretty much non-existent. Am I doomed to failure, or can I work around this and still have a tolerable variety of meals? I am a real food lover (and unfortunately not much of a veggie lover), so I'd really appreciate any interesting ideas people have. Thanks!
