Guest guest Posted January 3, 2008 Report Share Posted January 3, 2008 Some of you requested the Protein Pumpkin Cheesecake recipe so here it is! This is from Bill 's " Eating For Life " cookbook. If you don't have it, I highly recommended it! It has tons of recipes for b'fast, lunch, dinner, desserts, and snacks. It's all normal, everyday recipes too -- nothing crazy! 2 c. low-fat ricotta 1 can (15 oz.) pumpkin puree 1/2 c. sugar-free maple syrup 5 T. sugar substitute (I used splenda) 1 t. pumpkin pie spice 1 t. vanilla 3/4 c. vanilla protein powder (whey or soy) 1 Ready Crust reduced-fat graham cracker crust Preheat oven to 400. In large bowl (I actually do mine in the blender) combine all ingredients until well blended. Pour into crust and smooth out. Bake for 40 mins or until set (just like normal pumpkin pie). Cut into 8 portions. One portion is a slice. You can top with a little FF Cool Whip is you like. I've made it several times and it's SO good!
