There is a recipe in The Gradual Vegetarian that I think calls for cottage

cheese in Mac & Cheese. But I don't recall that it's very binding.

Yes, In fact how my mom makes lasagna is to put cottage cheese, low fat

ricotta, and eggs in the blender till its smooth and use that in the layers.

I did something similar sunday with pasta and pesto and veges.

Altho I am a cheesemeister myself, I dont think I have ever used

cheese in a casserole(?) perhaps ON some enchiladas or such but my

other choice to use in a casserole is soup. Yep the s soup

thats holds the traditional greenbean dish together works well with

other stuff too:

When I do casseroles, I leave a small part (like 1/5 of the top) with just a

little cheese, for me. Of course this won't work if you put the cheesy goodness

throughout your casserole. : ) I don't bother with lowfat, I just use a tiny

amount.
