It is basically silken tofu whipped up with melted chocolate and a little honey & vanilla. Yesterday we had part of the hubby's family over and I offered to make a trifle. I purchased anglefood cake, bought raspberry and blackberry freezer jam at the local farmers market, and then made a vanilla pudding out of tofu based on the idea of the chocolate pudding. The pudding was 3 packages of silken tofu, about 8 TBS of sugar (you could use splenda or a splenda blend), a little soy milk and a few Tsp of vanilla and almond extract. I whipped it all up in a blender. Yummy! There was a tad bit of a aftertaste to the pudding, but it wasn't noticeable in the trifle. I like tofu, so I think I could even eat the pudding plain (and I did while making the dessert -- it was my free day, afterall). So... I haven't run the nutritional analysis on it, but in the scheme of things I think it wasn't too " dangerous " especially for a free day (or if I'd used Splenda instead of sugar, it would be an acceptable BFL " meal " ).
