Have you tried buckwheat which is not a wheat but made from the seeds of a member of the rhubarb family?. It's got a quite strong flavour but holds together well and is quite nutritious. Russian blini pancakes are made of buckwheat flour. I don't know if it needs soaking. Ble Noir is supposed to be buckwheat and is the base of the savoury style Bretagne crepes. Is there any reference to them in the book? Would love to know. Try and get your local library to buy or borrow it so that you can see if it suits you first. It's by Whitley. I bought it from his bakery in Melmerby (Cumbria) I'm sure Amazon carry it but as i say the gluten-free is only a small part of it. Sourdough is the biggest chunk.
