The book that I keep going on about Bread Matters by Whitley has

a section on strange and wonderful flours and how to bake with them.

Have you tried buckwheat which is not a wheat but made from the seeds of

a member of the rhubarb family?. It's got a quite strong flavour but

holds together well and is quite nutritious. Russian blini pancakes are

made of buckwheat flour. I don't know if it needs soaking. An acidic

soak to make pancakes would cover that

Sally,

I brought some Ble Noir back from Britanny last year. Ble Noir is

supposed to be buckwheat and is the base of the savoury style Bretagne

crepes. Is there any reference to them in the book? Would love to know.

I'll post one of his gluten-free bread recipes and you can see if it works.

reading. Sara

Re: Putting the Polish on Those Humble Beans

The gluten-free is only a small part of the book. Try

and get your local

library to buy or borrow it so that you can see if it suits you first.

It's by Whitley. I bought it from his bakery in Melmerby

(Cumbria) I'm sure Amazon carry it but as i say the gluten-free is only

a small part of it. Sourdough is the biggest chunk.
