Loads on the virtues of chewing beside my view that it keeps the child quiet. I found that I could substitute buckwheat (not a wheat) for the majority of flour in the basic rye sourdough and the bread would rise just the same. Have you made the rye sourdough -- now that really is chewy. I have also substituted gram. I did it both times after removing the starter so that the starter stays pure rye.
