I have been brewing KT for the past year and all winter my brews (I use a 2.5

gallon glass jar with a plastic spigot) have not been producing any baby's. The

tea has been turning acidic in about 2 weeks with minimal carbonation. The temp

has been quite cool where I brew (about 55 to 60 degrees) and I am hoping that

the warmer spring temps would produce a stronger culture. I also tried growing a

baby from 2 bottles of GT but the baby was very thin. I just started a 1 gallon

batch using that SCOBY. I would be interested in hearing other experiences with

winter brewing..... Thanks ..
