It's just healthy yeast manifesting and teaming up with the tea. How much sugar are you using in your recipe sugar per gallon? I use about 1 cup and 3/4 of sugar per gallon (400grams per 4 litres). How far on are you into your brewing. I bottled my brews today on day 8, but it's been quite cold for the last few days, which slows down the fermentation. Lay your worries to rest about the ooglies, they are normal! I only put 1 cup of sugar in for the gallon.. that is the recipe I was give for it.. Hi again, Personally I should persevere with the brew now going. If it's been going a week, it might very well be ready now. Do taste it NOW. Does it taste as you had imagined? If the flavour is rather 'thin' and you don't like it at all, you could dissolve a little more sugar (half a cup) in some hot tea. COOL it and add to your 'thin' brew and leave for about 4 more days. Try again. It may take a little while to get the Kombucha to your personal best.
