Hi EveryOne,

I am one of the people who have had my bottled Kombucha tea explode, both in

glass jars and wire bale top bottles and I do warn about doing secondary

fermentation. When it explodes, it goes off like a grenade spreading glass

shards and Kombucha everywhere. Fortunately, it was in my garage, and no one was

hurt.

However, if you do secondary fermentation you risk serious injury to yourself or

children and pets nearby. Hardly worth it for a little fizz.

If you decide to do secondary fermentation despite these warnings then at least

be sure to open the bottle every day and let the carbonation out. One person

told me that a bottle that was refrigerated and then left out on their counter

over night exploded during the night with the same glass shards and KT

everywhere. Since it was the middle of the night, no one was hurt.

I have written many posts about getting fizzy Kombucha without secondary

fermentation. You can find them in the archives and in the list FILES section.

No need to do secondary fermentation for fizz or flavor.

Adding sugar to the bottle will speed up the fermentation process even more and

will hasten the explosion unless you open the bottle daily. Many people have

done secondary fermentation without incident of maybe spilling the KT from the

fizz but every once in awhile one will go off and it isn't worth taking the

risk.
