I was introduced to kefir via the Body Ecology diet when I was battling candida. I stayed away from all dairy for quite a while while my body was healing, but have seen how much better tolerated it is when fermented. I found some kefir grains and each batch is better than the last. I LOVE this stuff! I also make kombucha and krauts and am learning to make cheeses with the raw milk/kefir and hope to try rejuvelac and sourdough soon. I made a batch of pancakes with the kefir last week and was blown away at how much better they were than with plain milk.
