I'm wondering if anyone here has used the Body Ecology kefir culture (comes in a packet and is powdered) to make kefir. I have used kefir grains and the kefir culture and love them both. The thing I love about using grains is that once I've strained the grains, I can leave the kefir out for a while and let if get fizzy. I love love love my kefir fizzy. Is there a way for me to do get fizzy results using a kefir starter such as the one mentioned above? Thanks for your consideration! Guest guest Posted December 16, 2008 Report Share Posted December 16, 2008 Hi Garret, It is my understanding that the powder is a lab-created imitation, that has not even close to the number of species of flora in real kefir made with kefir grains. The real kefir has a flora spectrum of about 35 species of good bacteria and the powder culture has a spectrum of about 7 or 8. Pre-made kefir bought from the grocery store has the same low number. If I were you, I would stick with making your kefir from the real thing.
