Guest guest Posted February 9, 2012 Report Share Posted February 9, 2012 From what i understand, you can ferment herbal and other teas but it may not turn out good without at least some regular tea. I've heard it is really bad if they have oils in them, such as earl gray tea, that can kill the scoby. I'm using the herbs and stuff at bottling time, and have been really jazzed about the results. I've used hibiscus and rooibos (not in the same bottle) and they are both great. Elderflowers are a nice one too, but it's really easy to overdo flavorings so be conservative. I'd really appreciate any feedback/advice from those of you infusing (or fermenting-?) the following: HibiscusRooibos I bought a box of each last night at my HF store - $14.50 for 50 tea bags. WHEW! Very pricey, but hopefully the health benefits outweigh the cost. And I really like the taste of the Chinese-imported hibiscus. Sadly, I'd had a beautiful dinner plate-sized dahlia (hibiscus) for many years until a blizzard hit last year. Ouch...if only I'd known about making hibiscus " tea " all those years! I'll be heading to the local nursery once again, before long. Also, I recently purchased some elder flower tea bags (again, very pricey!) as my SO has allergies that even daily Benadryl doesn't always give relief with. I brewed it double strength, adding 3-T to his daily KT bottle. For the past few days I've reduced it to 1.5 T and he is still enjoying relief from sneezing and runny nose syndrome.
