to cover or not to cover

Hi! I just read in making WK, one should air tight cover the WK. For

some reason, I have been just covering them with a coffee filter and a rubber

band. Which way is the best for WK. The article said fermenting the WK

without air was the correct way.

Re read the article , it is the opposite, it needs air.

Were is the article from?

I am going to have to look, it seemed like they should be reliable...

that's what sorta shocked me... when I find it- I will link it on

here..... I am dealing with a low thyroid- BRAIN FOG- so I have to really

think

where I read it. My low thyroid is what got me into KT, MKG and WG. to begin

with.....
