I would also encourage you to use a minimum or 25 percent proper tea =

camelia sinensis with your Rooibos concoction. Oolong is a good option.

Your culture needs the nutrients provided by tea (Rooibos is not a tea, but

a tisane, which is, of course very healthy, but lacks the nutrients the

culture needs for making the famous Kombucha Tonic.

BTW, the 'cha' in Kombucha means 'tea', real tea.

I just used the whole thing for the second batch then started separating

the new ones off the top and now have three gallons brewing at the same

time. The bigger the scoby the faster it brews.

Margaret.. sound good what you say about other teas added.. BUT for me not a

very good idea.. I did my first batches with Black tea and become anemic.. which

I was not anemic before hand.. So in searching what would have caused me to be

anemic out of the blue? I discovered black and green tea has to much oxalic acid

and tannins and so could cause anemia in some people(which is probably

intuitively why I must have never liked tea all my life from a wee girl, my

family were all tea drinkers and would ask to please not have to drink it, so

they always allowed me to have hot water plain, which as I grew older I learned

to put lemon in and loved it)

But now this new batch I have finally did was all new with only rooibos in it..

and it brewed awesome.

So may I ask what are the nutrients that are in teas that are not in rooibos?
