Even my daughter who turns her nose up at GFCF gobbles these down. This year we’re doing a gingerbread house even. Hope you like it, S. GINGERBREAD: 1 1/3 cups honey 1 cup brown sugar 1 cup dairy-free margarine 1 tbsp cinnamon 1 tsp bicarb soda 1 1/2 tsp ground cloves 1/4 cup ground nuts (optional) 2 tbsp mixed peel 2 tbsp chopped preserved ginger (I use 1 T of fresh) 1 egg 6 cups GF flour* 1 tsp xanthan gum * I have used flour mixtures in the past and I have also used riceflour alone, but the riceflour gingerbread needed several days to soften to a good texture after baking. ICING: 2 egg whites 2 cups icing sugar (confectioner's sugar) 1 tsp vinegar colouring Method: GINGERBREAD: Combine honey, sugar & dairy-free margarine in a saucepan. Cook until mixture comes to a boil, then cool to lukewarm. Stir in all other ingredients except flour. Blend well. Add flour until well combined. Refrigerate overnight. Roll out 1/4 inch thick & cut into desired shapes. Bake 10 mins at 375 degrees. Let cool before decorating. ICING: Beat all ingredients until stiff. Color and decorate. Recipe makes 8-12 dozen. For extra flavour store in covered container 2 weeks before eating. (This is well worth doing!)
