Happy Mother's Day to all our Moms! Have a great day.Here are a few uses for that old favorite, Essential Oil of Lemon along witha gluten free Lemon scone recipe.Enjoy!Add a few drops of Lemon to a tissue and inhale for a boost to the emotions,or to help promote mental clarity.Try adding Lemon to a variety of beverages as a natural flavor enhancer.Add to hot water and vinegar for a great surface cleaning productAdd 5 drops of Lemon oil and 2 drops of Peppermint essential oil to 1 cup ofpure water, shake and spray for freshening.Gluten-Free Lemon Poppy seed Scones2 1/2 cups nut and/or seed flour (can use a mix of nuts and seed: almond,walnut, pecan, pumpkin, sunflower, flax)1/2 cup gluten free flour3 Tbs coconut oil3 Tbs apple puree (organic unsweetened apple sauce works well)1/2 cup raw honey1/2 tsp baking soda1/8 tsp sea salt3 eggs (or equivalent egg

replacer)2 Tbs lemon zest2 Tbs poppy seeds3-4 drops Lemon Essential Oil1. Preheat oven to 3752. Grind nuts in blender or coffee grinder and dump into large mixing bowl,mix in baking soda and salt3. Place eggs, coconut oil, apple puree, lemon oil and honey into blenderand mix thoroughly and add to nut mixture6. Add in lemon zest and poppy seeds6. Lightly oil muffin tin tray of line tray with cupcake liners, or covercookie sheet in parchment paper7. Spoon batter into tray or dollop onto cookie sheet- all depends whatshape you want your scones8.
